To satisfy the continuous desire for freshness of these hot days, we have chosen two of the ingredients that are always present in our kitchens: tuna in olive oil and lemon - Sfusato di Amalfi - and we have added an extra aromatic touch with fresh mint. A simple and tasty recipe, perfect for both lunch and dinner.
The ingredients are really simple and the preparation does not present any kind of difficulty. Our advice is to prepare the pasta dressing a little in advance, so as to allow the aromatic herbs and lemon to flavor the tuna.
Tuna and mint have a very strong taste and thanks to the lemon, we will have the right balance between flavor and acidity. The Lemon Costa d'Amalfi PGI (or Sfusato) is our favorite for its tender and juicy pulp. This citrus fruit has sparkling and genuine aromatic notes, hidden under a thick skin of a light yellow color.

340 g Antonio Amato Whole Wheat Fusilli
2 lemon
240 g tuna in olive oil
20 leaves mint
salt to taste
Antonio Amato extra virgin olive oil EVO to taste
black pepper to taste
The preparation of this recipe is very easy and fast, it does not need any special cooking other than pasta. Bring the water to the boil without exaggerating with the salt and cook the Antonio Amato Whole Wheat Fusilli. Meanwhile prepare a mixture of oil and lemon juice and add a part of fresh mint cut into coarse pieces.
In this way the leaves will be slightly macerated and the sauce will absorb all their aroma.
Drain the pasta, leaving aside a little cooking water. Break up the previously drained tuna and mix together. After a good mixing of all the ingredients put the dish in the fridge for at least 1 hour. Before serving, add a pinch of black pepper, the leaves of fresh mint and a grating of lemon peel.
