Some very simple ingredients for a triumph of flavours: the pizza recipe

Today, in our Diario Salernitano, we are going to give place to a very ancient and simple recipe, taken from my granny’s old collection of recipes: the pizza dough. It is an opportunity to rediscover the taste of the family traditions, the simple products of our territory and an essential dish of the Mediterranean cuisine.

Pizza

Thin and crunchy, thick and soft, with mozzarella or only with tomato sauce, pizza satisfies all the tastes. There are few secrets for a perfect pizza: the dough, the choice of the raw materials and a pinch of passion and love for the healthy eating.

Ingredients

1 Kg of bread flour

2 cups of warm water

Extra Virgin Olive Oil

2 packages of 25 gr each of brewer's yeast

20 gr of salt

If you want to prepare the dough with a pasta maker it will be simpler and faster but if you want to do it by hand on a pastry board or in a large bowl the result will be excellent as well.

Method

Place the bread flour in a large bowl; add the yeast and ½cup of water.

Start to knead it by gradually adding all the ingredients being careful that the previous dose has been well absorbed. When the dough has become soft and uniform, add the salt and the oil and keep on kneading it vigorously. When all the ingredients are mixed, take the dough off of the bowl o pick it up from the pastry board and knead it by hand to obtain a smooth and uniform loaf.

Place the dough in a lightly oiled bowl and let it rise covered by a damp rag for almost two hours and half, until its volume has doubled.

While our soft loaf is rising we can think of the seasoning; there are no limits to the imagination: it exists the simple one; with tomato sauce, garlic and oregano; the classic one, with tomato sauce and mozzarella and the strong one, with potato, provola cheese and rosemary.

We will be loyal to the tradition: we want to retrace the steps of the ancient recipe that we have found and our pizza is going to be seasoned with tomato sauce, cow mozzarella and basil.

When the dough has risen, roll it out by hand on an oiled baking tray (to oil it properly you can use a kitchen brush or a paper towel).

Pour two generous spoonful of tomato sauce and a pinch of salt, a bit of extra virgin olive oil and bake it in a pre-heat oven at 200° for 15 minutes.

Pull the baking tray out of the oven for a while; add the chopped mozzarella on the pizza and the basil and let it cook for 5 minutes more.

Taste it fresh from the oven and let the smell of this fabulous masterpiece of the cooking delight your palate.
