Loaded with beautiful holiday memories just past we returned home relaxed, but with a little more guilt.

Between a dinner with friends and a family lunch we were weighed down by a few hundred grams, splashing happily between fried dishes and abundant first courses. So how can we get back into shape and take on the energy to start to face everyday life again?


The answer is only one: eating well and in a healthy way

For this reason we thought of a light recipe, very tasty and perfect for the month of September. The whole wheat pasta mista is the guarantee for a healthy meal and is delicious both hot and cold because it keeps cooking very well.

Pine nuts, Parmesan cheese and basil are the right seasoning with which to prepare a quick pesto and give a flavor to the dish.

And the pumpkin? It is the ingredient that winks at autumn and gives color to the dish. In addition, it is a vegetable really rich in nutrients and benefits for our body: its soft, sweet-tasting pulp has very few calories and is not fattening. Inside are the vitamins of groups A, B and C and beta-carotene, the antioxidant par excellence.

The pumpkin also helps those who want to fight anxiety and stress due to returning to the city.

Thanks to the presence of magnesium and tryptophan, it helps relax muscles, cures insomnia and brings immediate psychophysical benefits, stimulating the production of serotonin.

Now let's move on to the preparation of the dish!


INGREDIENTS FOR 4 SERVINGS

320 g Antonio Amato Whole Wheat Pasta Mista

200 g pumpkin

40 g pine nuts

40 g parmesan cheese

10 leaves basil

salt to taste

Antonio Amato extra virgin olive oil EVO to taste


DIRECTIONS

Let's start with the preparation of the pumpkin. Cut it into cubes and cook in a pan with a drizzle of oil and a pinch of salt over low heat. Add a little water and let it simmer for a few minutes, until the cubes are cooked.

The pesto can be prepared simply with a mortar with pine nuts, parmesan cheese, the basil that you have previously washed with cold water and the Antonio Amato extra virgin olive oil to be added flush. If you are in a hurry, you can also choose a good pesto sauce!

Now cook the pasta in boiling water and when cooked, drain it and place it in a bowl.

Add the pesto, mix well with the pasta and then add the diced pumpkin.

For those who prefer the hot variant, the dish is ready, just a light sprinkling of Parmesan cheese to complete it. Those who like to eat it cold must rest it in the refrigerator for at least three quarters of an hour.
