A simple and delicious first course, directly from Calabria

Let’s start our journey exploring flavors from a beautiful land, famous for the quality of its products: Calabria! Here there are a lot of gastronomic specialties: ‘nduja, Tropea red onion, caciocavallo, mushrooms… But today we are looking for a simple recipe, inspired by the genuine roots of this land, such as pasta ca’ muddica!

Pasta ammuddicata is both simple and tasty. You only need a handful of breadcrumbs toasted in our best olive oil EVO and some fillets of anchovies to make an excellent dish. Take good care in selecting the best ingredients, especially: homemade bread, olive oil EVO, anchovies and above all excellent Bucatini (an Italian type of pasta, similar to Spaghetti)!


INGREDIENTS FOR 4 SERVINGS

600 g Antonio Amato Bucatini

breadcrumbs to taste

150 g fillets of anchovies finely chopped

Antonio Amato Olive Oil EVO to taste

70 g grated pecorino cheese

2 chopped garlic cloves

salt to taste

pepper to taste

parsley to taste


DIRECTIONS

Remove bones from the anchovies. Rinse them in cold water and let them dry. Fry in a pan with olive oil EVO and the chopped garlic. Add the breadcrumbs and cook for a few minutes.

In the meanwhile, drain your Bucatini “al dente” and stir them into the sauce and sautè for a few minutes.

The best way to taste this dish is by flavoring it with grated pecorino cheese, a sprinkling of pepper and chopped parsley. Enjoy!
