The arrival of spring brings on the table the best vegetables of the year, including asparagus.

These tasty vegetables, with a delicate flavor, find their ideal complement in the sweetness of the cherry tomatoes that give the dish color and creativity.

320 gr Antonio Amato Sigarette pasta

500 gr Asparagus

250 gr Cherry tomatoes

EVO oil Antonio Amato to taste

1 Shallot

Grated Parmesan cheese to taste

Salt to taste

Black pepper to taste


In a large pot boil 4 cups water with salt. When boiling, add asparagus and cook 8-10 minutes, until tender crisp. Drain asparagus in colander reserving 1 cup liquid before draining.

Fill pot with salted water, cover and boil for pasta. When water boils cook pasta according to package directions for al dente.

Meanwhile, in a sauté pan heat olive oil. Add shallot and cook until golden, add cherry tomatoes and asparagus, salt and pepper and sauté about 1-2 minutes.

After pasta is drained return to pot with sauce, toss with asparagus and mix well. Adjust salt and pepper to taste. If pasta seems too dry add more reserved liquid a tablespoon at a time.

Serve with additional grated cheese.
